I've made Burrito's several times my way before using Beans, ordinary Veges with Fish or Chicken as a "stuff in" for the tortillas and they are so good and very easy. I would also share those recipes too with time. The Burrito's(or simply flat dough with stuff in) that I do comes with a healthy twist to reduce the calories and I make my tortillas(flat dough) in my own way and it comes out well,I use whole wheat for mine. There are different methods to it, the one written is my own Lydia's touch.
You can bye from a supermarket but I prefer home-made because then you can control the ingredients that go into it and its so simple... I did this for new year celebration,before every one woke up on new years morning...bam,this and a whole lot more were ready...Everyone ate this to their fullest,you can also bam your friends and family with this and a whole lot more, both during festivities and outside festivities
So lets get prepping...
Ingredients for Tortillas (or wrap)
1) 3 cups of whole wheat
2) half teaspoon of salt
3) Water
Baking powder is optional but if you want to add, make sure its very little because you do not want your dough to rise, personally I do not add any raising agent to my recipe.
Ingredients for stuffing or sauce
1) I used 2 turkey legs cut to really small pieces 2) Half of a medium sized cabbage 3) One handful of green peas 4) 3 Carrots 5) 2 fresh tomatoes cut into dice quarters 6) 1 chili pepper, cut round and thin 7) Half teaspoon of Ghana pepper or Cameroon pepper 8) 3 tablespoons of Kidney beans
9) One spring onions 10) Curry just a pinch 11) Half teaspoon of rosemary 12) 2 cloves of garlic 13) 2 teaspoons of Turmeric powder 14) Half a cooking spoon of any no cholesterol oil (in Nigeria the most popular ones are Power oil and Mamador) but if you can, use other omega 3 no cholesterol and low in calorie oil like Olive oil, Canola oil, Sun flower oil, Coconut oil etc. They are extremely lovely in meals with their beautiful flavors.
Please do take note that the Vegetables and spices can be added according to preference, the above was just what i needed at that time but you could diversify with more greens and spices but don't advice stock cubes.
Turmeric was the beauty of this recipe (i am in love with Turmeric), so to get the taste and color of my sauce you have to get Turmeric, you can find it at your local market in abundance, powdered or in its raw form and very good for your health too.
Prep
- Firstly, cut the Turkey down and put in a pan or small pot add salt and a little pepper with a pinch of curry and mix with your washed hands,add little water its optional because the Turkey has enough moisture to release water.Let it steam for 10 to 15mins,then bring down to cool.
TURKEY SAUCE
- Remove the flesh of or Turkey from the Bone because you would'nt be needing the Bones (its for you to crack*wink*) Put your Turkey flesh in a Blender and blend till it turns to strands but not till mushy.
- Put in a Pan and on low heat stir gently till they begin to separate slowly.
- Then pour in your spices stir and keep tasting till its very spicy or rather salty, why because when you role it into your dough and transfer into Oven, the heat tends to dampen the taste of your sauce, so you would want to cook your sauce spicy so that when it gets into the oven and the taste is reduced it would still be tasty enough. Its a secret I discovered a long time and it has worked for me so far.
- Pour in oil stir for 30secs and then add the Veges. stir all together and remove from heat after 30 secs. Its advisable to not keep your veges long on heat, I don't because I wouldn't want to reduce half of its nutrients or color.
- You can decide to leave to cool and let its moisture reduce so that your dough isn't soggy.
Meanwhile in a bowl put in the wheat,salt and water, stir gently as you pour in the water. Let your mixture come out a bit light but not thick, light enough to pour.
- Put a non-sticky pan on the fire, if your pan isn't non-sticky glaze or rub it with oil. Do not add oil.
- Then gently use a cooking spoon to collect little at a time and spread evenly on the surface of the pan. Try not to take much, so your dough wouldn't be thick.
- Turn gradually to the other side after 1 minute repeat same for the other side, do this twice for all your dough.
- Don't stack your dough on each other if not they can get soggy, its advisable to make your sauce down first so that once you are done with one dough you put in your stuff in and straight to the oven.
- When both Sauce and Dough is set use a table spoon to collect the sauce and spread it on a straight line in the dough either at the center at the edge, I did mine from the edge.
- Then role and transfer to your oven. Be careful not to put too much of the sauce because you wouldn't want it pouring out, just be moderate.
- Bake for nothing less than 3mins with a moderate heat. I used number 2 with a gas Oven.
- then gently bring out, serve and enjoy...
