FULL RECIPE
INGREDIENTS - 4 TABLE SPOONS OF HONEY - 2 CUPS OF WHOLE WHEAT - ½ TEASPOON OF BAKING SODA - 1 TEASPOON OF BAKING POWDER - ¼ CUP OF NO CHOLESTEROL OIL - SALT - WATER - 1 EGG WHITE - FINELY GRATED COCONUT( FOR GARNISHING AND FOR THE CENTER)
PREP - POUR ALL DRY INGREDIENTS WHEAT, BAKING POWDER, BAKING SODA, SALT INTO A BOWL AND MIX WELL
- CREATE A HOLE IN THE MIDDLE AND POUR IN THE OIL. MIX IN WITH YOUR TWO HANDS LIGHTLY.
- ADD HONEY AND THE COCONUT MILK, MIX TOGETHER WELL BUT LIGHTLY WITHOUT FORCE, THEN ADD WATER GRADUALLY.
- YOU WANT YOUR DOUGH TO BE SOFT, FIRM AND EASY TO ROLL BUT NOT STICKY, SO YOU WOULD NEED TO GO EASY ON THE WATER.
- NOW BEGIN TO MIX BY FOLDING AND THEN PRESSING WITH YOUR FIST, LIGHTLY WITHOUT FORCE. CONTINUE TO MIX THAT WAY TILL ALL IS WELL INCORPORATED, THEN TAKE A LITTLE WHEAT AND SPRINKLE ON A WORK SURFACE OR A WIDE TRAY.
- TRANSFER THE DOUGH TO IT AND CONTINUE MIXING LIGHTLY. FOLD AND PRESS WITH YOUR FIST CONSISTENTLY BUT NOT WITH FORCE TILL YOUR DOUGH IS SMOOTH, FIRM NOT STRONG AND WELL MIXED.
- MOLD INTO A BALL AND THEN CUT LITTLE OR MORE FROM YOUR DOUGH DEPENDING ON HOW BIG YOU WANT YOUR BUN TO BE.
- FLATTEN YOUR CUT OUT DOUGH EITHER WITH A ROLLING PIN OR YOUR PALM, THEN TAKE LITTLE OF THE GRATED COCONUTS, ABOUT HALF A TABLESPOON. TRY NOT TO OVER CROWD IT, PUT THE COCONUT AT THE CENTER OF YOUR FLATTENED DOUGH.
- WITH YOUR HANDS SLIGHTLY COVER THE DOUGH WITH YOUR COCONUT AT THE CENTER. TRY TO COVER PROPERLY BY ALSO PRESSING WITH YOUR FINGERS. THEN YOU ROLL BACK INTO A BALL AND FLATTEN A BIT.
- ROLL YOUR MOLDED DOUGH INSIDE YOUR BOWL OF GRATED COCONUT, MAKE SURE YOU COVER EVERY SIDE AND TRANSFER TO YOUR PAN SPRINKLED WITH OIL. REPEAT THE METHOD TILL YOU HAVE EXHAUSTED ALL YOUR DOUGH.
- RUB THE TOP OF EACH BUN SLIGHTLY WITH EGG WHITE USING A SMALL BRUSH OR YOUR FINGERS. AFTER THAT, PUT THE PAN INTO THE OVEN AND BAKE UNTIL THE TOP TURNS BROWNISH, I ALWAYS ADVICE A TASTE VERSION, SO THAT YOU COULD OPEN AFTER THE REQUIRED TIME AND FIND OUT IF THE INSIDE IS WELL DONE.
- IN THIS CASE YOUR COCONUTS WOULD BE SLIGHTLY BROWN AT THE TOP, YOU DON’T WANT THE COLOR TO TOTALLY CHANGE.
- TIMING APPROXIMATION MAY DIFFER WITH PEOPLE, TRY TO BE INTUITIVE WHEN IT COMES TO TIMING, BUT FOR BOTH A FIRE OVEN AND AN ELECTRIC OVEN YOU SHOULD CHECK FROM 30 – 45 MINS.
- FOR A FIRE OVEN THE HEAT SHOULD BE AT AT LEAST NUMBER 4 AND ELECTRIC OVEN SHOULD BE AT AT LEAST 350 DEGREES.
