CHICKEN WHEAT-CHAPATI ROLLS

I think I did my best to explain this recipe with lots of picture illustrations, that could easily help explain it and also show the fun I had creating it.


Firstly, I want to talk a bit about Chapati... My family and I fell in love with it some years back and haven't turned back since then. We basically do everything from wraps for stuff-ins, burrito wraps, shawarma wraps or to just eat as a flat bread with a sauce or just like that lolzz, as a snack.


Chapati is an Indian flat bread that is made with wheat flour and one or two ingredients, or even more. Its a flat bread achieved by making a flat, fluffy dough and then putting it on a flat dried non-sticky pan on heat, like the picture below.


Another difference in the Chapati dough is that, before putting it on your pan, the back or the side that faces the pan first is wet with water before been put on hit.





I prepared this particular one captured in picture for someones lunch at work, which I combined also with pineapple and ginger juice and it was so good and satisfying that I decided to add it to the blog.

We couldn't get enough of it, it was like; abeg... bring more... (but body weak me, i didn't have the strength to do any more lolzz), The shredded Chicken sauce also spiced things up and contributed to how tasty it was, I made it with a healthy low calorie twist.


I also didn't put it on the pan to cook till I had put in the Chicken sauce and rolled it.



And... this is one friends, family and even party healthy-low cal treat that would make everyone fall in love with you.

It even works perfectly as kids lunch, its easy and fast. You can decide to make your dough over night and cut them into small balls and refrigerate in a plastic bag. This would enable you roll easily and prepare in the morning.


So lets get cooking...




My ever faithfull non-sticky pan

Ingredients

1) Boiled Chicken tenders without the skin (chicken breasts, or any part, with the bones removed)

2) Vegetables (Cabbages, Carrots, you can add any more of your choice).

3) No cholesterol oil

4) Onion

5) 1 tbsp of Honey

6) Whole wheat flour

7) Water

8) Salt

9) Curry

10) Pepper

11) Thyme

12) 1 egg white

13) Garlic and Ginger paste





Prep


1) Boil your chicken tenders with a little onion, salt and pepper add some of your garlic and ginger paste till they are soft but not too soft.


2) Bring down from heat and set aside to cool, drain the stock away and keep it also.


3) After Chicken is cool enough to handle with your hands, wash your hands again and shred them with into tiny shreds(don't blend).





4) Put a pan or small Pot on heat, pour in your meat stock, a little of it.


5) Add your chicken with onions and stir till the chicken is looking a bit dried.


6) Add salt, pepper, Garlic and Ginger paste, curry, thyme.


7) Taste and make sure the spiciness is very well pronounced.


8) Keep stirring add a table spoon of oil, stir till its well in cooperated and then pour in your vegetables.


9) Bring down immediately after 1min and set aside.


10) To remove the excess liquid from your sauce because we don’t need the sauce moist,to avoid the dough from getting moist. Turn the the sauce into a filter or strainer with a plate or bowl under.


11) Then prepare your chapati wrap.




Chapati wrap

1) In a bowl add your wheat, 1 table spoon of oil, egg white, honey, half teaspoon of salt and rub in with your hands till its properly mixed.



2) Add water gradually and mix in with both hands. Keep kneading and pressing with palm, rolling into a ball and pressing with fist till it’s well mixed.


3) Add water till its well rounded and mixed in properly, then form a well-rounded big ball with it.


4) Make sure your dough is easy to cut, not too sticky and easy to roll. Be careful and avoid a strong dough. This means you would keep adding more wheat or water when needed.


5) Cut out into little balls from your dough, take one ball and roll flat with a rolling pin on a clean surface sprinkled with wheat flour.


6) Repeat rolling front and back repeatedly till you have a light and flat fluffy easy to handle dough.




7) Prepare your non-sticky pan or if you don't have one, get a plain frying pan with oil rubbed round it to avoid it from sticking.


8) At the center or at the edge of your rolled out dough according to the pattern of your choice, put in your Chicken sauce and roll carefully as shown in the picture.


9) You can roll and live the middle opened by not folding it and cutting into a triangle shape as seen directly above,or you could cut in squares and then roll and fold the tops as seen below.


10) Put your pan on a low heat and turn at 2 mins interval or when you notice each side are getting brown in color but not burnt or so dry.





11) Remove, set on a plate or platter, then enjoy with your favorite healthy drink or tea…
